I remember reblogging this bit of wisdom from Pizzeria Bianco chef-owner Chris Bianco a looonnng time ago on Slice/Serious Eats. It’s no longer there, having been purged in Serious Eats’ most recent acquisition. But here’s a link to the Eater piece it originally came from.
